Yes, I got a new gadget at the end of summer. Actually, I got two…but I won’t talk about the awesome cotton candy maker right now. I’ll stay on task and report my new love: the waffle cone maker. Totally unnecessary, I know. Keebler makes perfectly good & safe waffle bowls.
Problem is, I’m an ice cream fanatic and there isn’t much that tops a scoop of ice cream in a fresh waffle bowl. And if it’s pumpkin ice cream, oh man, this will convert those of you sad sacks who only eat ice cream in the summer into year round lovers. Enjoy!

Description
This dairy-free and egg-free pumpkin ice cream has real pumpkin in it! The texture is smooth and creamy like a cold slice of pumpkin pie. The homemade spiced waffle bowls take it over the top.
Ingredients
- 20 regular sized marshmallows
- 2 cups vanilla dairy-free creamer (1 pint)
- 1 cup canned pumpkin
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ginger
- 1 pinch salt
Instructions
- Put the marshmallows in a big microwave safe bowl (I have an 8 cup Pyrex that is perfect for this)
- Heat for 1-2 minutes, until soft and puffy.
- Whisk the soft marshmallows with 1/2 cup creamer until smooth. You may have to return the mixture to the microwave for another minute or so to get the marshmallows to fully melt into the creamer.
- Whisk until smooth and the marshmallows are all melted.
- Add the remaining 2 1/2 cups of creamer, brown sugar, pumpkin, spices & salt and whisk well.
- Cool the mixture down in the freezer or refrigerator before pouring into an ice cream maker to churn and freeze. I have a Cuisinart ice cream maker that is wonderful.
Notes
You can use plain dairy-free creamer in this recipe, just add 1 teaspoon vanilla extract and 1/4 cup brown sugar to the ice cream mixture before churning in the ice cream maker. If you can’t find any dairy-free creamer, just use plain dairy-free milk of choice, add 1/4 cup brown sugar, 1 t. vanilla, and 2 T. oil to the ice cream mixture before churning in the ice cream maker.

Description
These homemade spiced waffle bowls are dairy-free and egg-free. They happen to be vegan as well. Fresh waffle bowls smell amazing while you bake them–many will be nibbled away before they ever see the ice cream!
Ingredients
- 1 1/2 cups cake flour (I use Swan’s Down Cake Flour)
- 1 1/2 cups powdered sugar
- 1/8 teaspoon salt
- 1/2 cup melted dairy-free margarine
- 3/4 cup plain coconut milk beverage (like Silk Coconut Milk)
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- dash of cloves
Instructions
- In a large bowl, whisk the dry ingredients together: flour, powdered sugar, spices & salt.
- In a smaller bowl, whisk the wet ingredients together. margarine, coconut milk, vanilla.
- Add the wet incredients together and beat well, until all the lumps are smooth.
- Heat up the waffle cone iron and bake according to manufacturer’s directions.
- I use a small ramekin to shape the bowls, but any small bowl will work. I just place the hot waffle over top of the bowl and press the hot waffle down inside, folding and pressing it into shape.
Notes
Cake flour is important in the recipe because it keeps the waffle light and crispy. You can substitute all-purpose flour, but the cones may be a bit more tough and chewy. Still good though!

Blue bonnet lactose free is a dairy free I use for most things.

this recipe sounds wonderful! i am really curious about your cotton candy maker though…i’ve thought about getting one and wondered if you could share some details! 🙂 We DO have the cuisinart ice cream maker and love love love it. One of my daughters has severe egg, peanut, tree nut and sesame allergies. My kids think it is SO cool to make ice cream at home. We’d love to try cotton candy at home…I’m sure our dentist will appreciate it! 😉
